Recipes | Pasta with Vegetables, Sesame seeds and Tahini

  • Ingredients
  • 500 gr spaghetti
  • 200 gr broccoli ( broken down into small flowerets )
  • 200 gr cauliflower ( broken down into small flowerets )
  • 2 carrots sliced
  • 1 leek (the white part only) thinly sliced
  • 1 red pepper diced
  • 1 zucchini diced
  • 80 ml Virgin Sesame oil
  • 100 gr Macedonian Tahini
  • roasted sesame seeds
  • salt, black pepper, cumin
 
     

Boil the spaghetti in salted water. In a wide saucepan put a small amount of sesame oil and sauté the leek and the carrots. Stir the rest of the vegetables until they get tender but without losing their colour. Season with salt, pepper, and cumin and add the pasta. Stir and serve immediately adding roasted sesame seeds, parsley and a spoon of tahini on top of each serving.
